Ingredients
1 lb bison sirloin, thinly sliced
2 tablespoons soy sauce
1 tablespoon hoisin sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 tablespoon cornstarch
2 tablespoons vegetable oil
2 cloves garlic, minced
1 tablespoon fresh ginger, grated
1 red bell pepper, sliced
1 cup broccoli florets
1 carrot, julienned
3 green onions, sliced
Instructions
In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, and cornstarch. Set aside.
Toss sliced bison with half of the sauce mixture. Let marinate for 10 minutes.
Heat vegetable oil in a wok or large skillet over high heat. Add bison in a single layer and sear for 1-2 minutes per side until browned but still pink inside. Remove and set aside.
Add garlic and ginger to the hot wok, stir for 30 seconds. Add bell pepper, broccoli, and carrot. Stir-fry for 2-3 minutes until crisp-tender.
Return bison to the wok, pour in remaining sauce. Stir-fry for 1 minute until sauce thickens and coats everything.
Garnish with green onions and serve immediately over rice or noodles.
Tips
Slice bison against the grain for tenderness.
