Ingredients
- 2 lbs bison stew meat, cut into 1-inch cubes
- 3 tbsp all-purpose flour
- 2 tbsp olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine (optional, or additional broth)
- 2 bay leaves
- 1 tsp dried thyme
- 4 carrots, peeled and sliced
- 3 celery stalks, sliced
- 3 large potatoes, peeled and cubed
- 1 cup frozen peas
- Salt and black pepper to taste
Instructions
- Toss bison cubes with flour, salt, and pepper in a bowl.
- Heat olive oil in a large Dutch oven over medium-high heat. Brown bison in batches, about 3-4 minutes per batch. Transfer to a plate.
- Reduce heat to medium. Add onion and garlic; cook until softened, about 5 minutes.
- Pour in broth and wine (if using), scraping up browned bits. Add bay leaves and thyme. Return bison to pot.
- Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour.
- Add carrots, celery, and potatoes. Cover and simmer for another 30-40 minutes until vegetables are tender.
- Stir in peas and cook for 5 minutes. Remove bay leaves. Adjust seasoning with salt and pepper.
- Serve hot.

- For a thicker stew, mash some of the potatoes against the pot before serving.
