Ingredients
1 1/2 lbs ground bison
1/2 cup breadcrumbs
1/4 cup milk
1 small onion, finely chopped
2 cloves garlic, minced
1 large egg, lightly beaten
2 tablespoons ketchup
1 tablespoon Worcestershire sauce
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 cup ketchup (for glaze)
1 tablespoon brown sugar
1 teaspoon apple cider vinegar
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a small bowl, combine breadcrumbs and milk; let sit for 5 minutes until absorbed.
In a large bowl, mix together ground bison, breadcrumb mixture, onion, garlic, egg, 2 tablespoons ketchup, Worcestershire sauce, salt, pepper, and thyme until just combined. Do not overmix.
Shape the mixture into a loaf shape on the prepared baking sheet.
In a small bowl, whisk together 1/4 cup ketchup, brown sugar, and vinegar. Spread half of the glaze over the meatloaf.
Bake for 45 minutes. Spread remaining glaze over the top and bake for another 10 minutes, or until internal temperature reaches 160°F (71°C).
Let rest for 10 minutes before slicing.
