Ingredients
1 lb ground bison
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup milk
1 large egg, lightly beaten
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons olive oil
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine breadcrumbs, Parmesan, milk, egg, garlic, oregano, salt, and pepper. Let sit for 5 minutes.
Add ground bison to the bowl and mix gently until just combined. Do not overmix.
Shape mixture into 1.5-inch meatballs and place on prepared baking sheet.
Brush meatballs lightly with olive oil.
Bake for 15-20 minutes, until cooked through and browned. Internal temperature should reach 160°F (71°C).
