Ingredients
2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon granulated sugar
1/2 teaspoon salt
6 tablespoons cold unsalted butter, cubed
3/4 cup cold whole milk or buttermilk
1 large egg (for wash, optional)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, sugar, and salt.
Cut in cold butter using a pastry blender or fingertips until mixture resembles coarse crumbs with some pea-sized butter pieces.
Make a well in the center and pour in cold milk. Stir with a fork just until dough comes together; do not overmix.
Turn dough onto a lightly floured surface and knead gently 4-5 times. Pat into a 3/4-inch thick rectangle.
Cut out biscuits using a 2.5-inch round cutter (do not twist). Place on prepared baking sheet, edges touching.
Optional: Brush tops with beaten egg for golden crust.
Bake for 12-15 minutes until golden brown. Serve warm.
Tips
For extra flaky biscuits, freeze butter and grate it into the flour.
Store leftovers in an airtight container at room temperature for up to 2 days.
