  4. Turn dough onto a lightly floured surface and gently knead 2-3 times. Pat into a 3/4-inch thick rectangle. Cut into 8 rounds with a 2.5-inch biscuit cutter.
  5. Place biscuits on prepared baking sheet, brush tops with additional cream, and bake for 12-15 minutes until golden brown. Cool on a wire rack.
  6. While biscuits bake, toss sliced strawberries with 2 tablespoons sugar in a bowl. Let sit at least 15 minutes to release juices.
  7. For whipped cream, beat 1 cup heavy cream with powdered sugar and 1/2 teaspoon vanilla until soft peaks form.
  8. To assemble, split each biscuit in half. Place bottom half on a plate, spoon strawberries and juice over it, add a dollop of whipped cream, and top with the other biscuit half.
