  2. In a large bowl, whisk together flour, baking powder, sugar, and salt. Cut in cold butter using a pastry blender or fingertips until mixture resembles coarse crumbs.
  3. Add buttermilk and stir just until dough comes together. Turn onto a floured surface and gently knead 4-5 times. Pat to 1/2-inch thickness. Cut out 4 biscuits with a 2.5-inch cutter. Place on prepared baking sheet.
  4. Bake biscuits for 10-12 minutes until golden brown. Let cool slightly.
  5. While biscuits bake, divide sausage into 4 equal portions and shape into patties slightly larger than biscuits (they shrink). Cook in a skillet over medium heat until browned and cooked through, about 4-5 minutes per side. Drain on paper towels.
  6. If adding eggs, fry them in butter or oil in a nonstick skillet over medium heat until whites are set and yolks are cooked to your liking. Season with salt and pepper.
  7. Assemble sandwiches: Split each biscuit in half. Place a sausage patty on the bottom half, top with cheese (if using) and a fried egg (if using). Cover with biscuit top. Serve warm.
