2 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1/2 cup cold unsalted butter, cubed
3/4 cup buttermilk
1 pound ground pork sausage
1/2 teaspoon black pepper
1/4 teaspoon sage
1 tablespoon vegetable oil
Instructions
Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
In a large bowl, whisk together flour, baking powder, and salt. Cut in cold butter using a pastry blender or fingertips until mixture resembles coarse crumbs.
Make a well in the center, pour in buttermilk, and stir just until dough comes together. Turn onto a floured surface and knead gently 4-5 times.
Pat dough to 1/2-inch thickness. Cut out biscuits using a 2-inch round cutter, rerolling scraps. Place on prepared baking sheet. Bake 12-15 minutes until golden.
While biscuits bake, combine sausage, pepper, and sage in a bowl. Mix well and shape into 4 patties.
Heat oil in a large skillet over medium-high heat. Cook sausage patties 4-5 minutes per side until browned and cooked through (internal temperature 160°F/71°C).
To serve, split biscuits and place a sausage patty on each bottom half. Top with biscuit tops and serve immediately.
