Ingredients
1 pound ground beef (80/20)
4 sesame seed hamburger buns
4 slices American cheese
1 cup shredded iceberg lettuce
1/2 cup dill pickle slices
1/4 cup diced white onion
1/2 cup Big Mac sauce (see below)
2 large russet potatoes
Oil for frying
Salt to taste
For Big Mac sauce: 1/2 cup mayonnaise, 2 tablespoons French dressing, 1 tablespoon sweet pickle relish, 1 teaspoon white vinegar, 1 teaspoon sugar, 1/2 teaspoon paprika, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder
Instructions
Make the Big Mac sauce: In a small bowl, whisk together mayonnaise, French dressing, sweet pickle relish, white vinegar, sugar, paprika, garlic powder, and onion powder. Refrigerate until ready to use.
Prepare the fries: Peel and cut potatoes into thin strips. Soak in cold water for 10 minutes, then drain and pat dry. Heat oil to 350°F (175°C) in a deep fryer or large pot. Fry potatoes in batches until golden brown, about 4-5 minutes. Drain on paper towels and season with salt.
Form the beef into 4 thin patties (about 4 inches wide). Season with salt and pepper. Cook in a skillet over medium-high heat for 3-4 minutes per side, until browned and cooked through. In the last minute, top each patty with a slice of cheese and cover to melt.
Toast the buns: Split the buns and toast the cut sides in the skillet or under a broiler until lightly golden.
Assemble the Big Macs: On the bottom bun, spread 1 tablespoon of Big Mac sauce. Add 1/4 cup shredded lettuce, a few pickle slices, and some diced onion. Place a cheese-topped patty on top. Add the middle bun (the extra bun half), then repeat with sauce, lettuce, pickles, onion, and another patty. Top with the top bun.
Serve each Big Mac with a generous portion of fries and extra Big Mac sauce on the side.
Tips
For a more authentic taste, use a blend of ground chuck and brisket.
The Big Mac sauce can be made up to a week in advance and stored in the fridge.
To keep fries crispy, serve immediately after frying.
