Ingredients
4 rashers streaky bacon
4 pork sausages
4 large eggs
2 large potatoes, peeled and grated
1 tbsp olive oil
2 tomatoes, halved
2 slices thick bread
2 tbsp butter
Salt and black pepper to taste
Baked beans (optional, for serving)
Instructions
Preheat oven to 200°C (400°F). Place bacon and sausages on a baking tray lined with parchment paper. Bake for 15-20 minutes until bacon is crispy and sausages are cooked through.
Meanwhile, squeeze grated potatoes in a clean kitchen towel to remove excess moisture. Season with salt and pepper. Heat oil in a non-stick frying pan over medium-high heat. Add potato mixture, pressing into a flat cake. Cook for 4-5 minutes per side until golden and crispy. Keep warm.
In the same pan, add a little oil if needed. Fry eggs sunny-side up or to your preference, seasoning with salt and pepper.
Place tomato halves cut-side down in a small pan over medium heat. Cook for 2-3 minutes until lightly charred.
Toast bread slices and spread with butter.
Arrange bacon, sausages, hash browns, eggs, tomatoes, and toast on two large plates. Serve immediately with baked beans if desired.
Tips
For extra crispy hash browns, use a non-stick pan and don't overcrowd.
You can swap bacon for back bacon or turkey bacon.
