  4. Meanwhile, make filling: sauté onion in olive oil over medium heat until soft and golden, about 8 minutes. Stir in poppy seeds and 1/4 teaspoon salt; cool.
  5. Punch dough down, divide into 8 pieces. Shape each into a ball, then flatten into a 4-inch round. Place on parchment-lined baking sheets, cover, let rise 20 minutes.
  6. Preheat oven to 400°F. Press center of each round with your thumb to create a well; fill each well with about 1 tablespoon onion mixture.
  7. Bake 15-20 minutes until golden brown. Transfer to wire rack to cool slightly. Serve warm or at room temperature.
