Ingredients
- 1 medium beet, roasted and peeled (or 1/2 cup canned, drained)
- 1 cup frozen mixed berries (strawberries, blueberries, raspberries)
- 1 medium banana, frozen
- 1 cup unsweetened almond milk
- 1/2 cup plain Greek yogurt
- 1 tablespoon chia seeds
- 1 tablespoon honey or maple syrup (optional)
Instructions
- If using fresh beet, roast at 400°F for 45-60 minutes until tender, then peel and cool. Alternatively, use canned beets.
- Add all ingredients to a blender: roasted beet, frozen berries, frozen banana, almond milk, Greek yogurt, chia seeds, and sweetener if desired.
- Blend on high until smooth and creamy, about 1-2 minutes. If too thick, add more almond milk a tablespoon at a time.
- Taste and adjust sweetness if needed. Pour into glasses and serve immediately.
Tips
- For a vegan version, use plant-based yogurt and maple syrup.
- Roast beets ahead of time and keep refrigerated for up to 5 days.
- Add a scoop of protein powder for extra recovery benefits.
