  4. Punch down dough, roll out to 1/2-inch thickness. Cut into 3-inch rounds. Place on floured baking sheet, cover, let rise 30 minutes.
  5. Heat 2 inches oil in deep pot to 350°F. Fry doughnuts in batches, 1-2 minutes per side, until golden brown. Drain on paper towels.
  6. Let cool slightly. Use a piping tip to inject about 1 tablespoon jam into each Berliner. Dust generously with powdered sugar.
