Ingredients
4 large Bratwurst or Bockwurst sausages (about 600g)
2 tablespoons vegetable oil
1 large onion, thinly sliced
2 tablespoons all-purpose flour
1/2 cup ketchup
1 tablespoon curry powder
1 tablespoon Worcestershire sauce
1 teaspoon paprika
1/2 teaspoon sugar
Salt and pepper to taste
4 crusty rolls or slices of bread
Instructions
Preheat a grill or grill pan over medium-high heat. Lightly oil the sausages and grill, turning occasionally, until cooked through and nicely charred, about 10-12 minutes.
While sausages cook, heat 1 tablespoon oil in a skillet over medium heat. Add sliced onion and cook, stirring, until golden and caramelized, about 8 minutes.
Sprinkle flour over the onions and cook for 1 minute, stirring constantly. Add ketchup, curry powder, Worcestershire sauce, paprika, sugar, and 1/4 cup water. Stir and cook until thickened, about 2 minutes. Season with salt and pepper.
Slice the grilled sausages diagonally into bite-sized pieces. Serve on a platter with the curry ketchup sauce drizzled over and crusty bread on the side.
Tips
For extra crunch, top with additional crispy fried onions.
Can be made with any German-style sausage like knackwurst or weisswurst.
Leftover sauce can be stored in the fridge for up to a week.
