Ingredients
2 medium beets (about 1 lb total)
1 tablespoon olive oil
1/2 teaspoon sea salt
1/4 teaspoon black pepper
Instructions
Preheat oven to 375°F (190°C). Line two baking sheets with parchment paper.
Trim beet tops and peel beets. Using a mandoline or sharp knife, slice beets into very thin rounds, about 1/16 inch thick.
In a large bowl, toss beet slices with olive oil, salt, and pepper until evenly coated.
Arrange beet slices in a single layer on prepared baking sheets, ensuring they don't overlap.
Bake for 20-25 minutes, rotating pans halfway through, until chips are dry and crispy but not browned. Chips will continue to crisp as they cool.
