2 tablespoons unsalted butter
1 small onion, finely chopped
1 carrot, finely chopped
1 celery stalk, finely chopped
2 cloves garlic, minced
1/4 cup all-purpose flour
1 cup beer (lager or ale)
2 cups chicken or vegetable broth
1 cup whole milk
2 cups shredded sharp cheddar cheese
1 teaspoon Dijon mustard
1/2 teaspoon Worcestershire sauce
Salt and black pepper to taste

Instructions
In a large pot, melt butter over medium heat. Add onion, carrot, and celery; cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
Sprinkle flour over vegetables and stir to coat; cook for 2 minutes, stirring constantly.
Slowly pour in beer, stirring to prevent lumps. Add broth and milk; bring to a simmer, stirring occasionally. Cook for 10 minutes until slightly thickened.
