Ingredients
1 lb ground beef
1 packet (1 oz) taco seasoning
2/3 cup water
1 can (16 oz) refried beans
1 cup Mexican rice, cooked
1/2 cup sour cream
1/2 cup nacho cheese sauce
4 large (10-inch) flour tortillas
1/2 cup shredded cheddar cheese (optional)
Instructions
In a skillet over medium heat, cook the ground beef until browned, breaking it up as it cooks. Drain excess fat.
Add taco seasoning and water to the beef. Stir and simmer for 5 minutes until thickened.
In a small saucepan, warm the refried beans over low heat, stirring occasionally.
Warm the tortillas one at a time in a dry skillet or microwave for about 15 seconds to make them pliable.
Assemble each burrito: spread about 1/4 cup of refried beans down the center of a tortilla. Top with 1/4 cup Mexican rice, then 1/4 of the seasoned beef. Add a dollop of sour cream and a drizzle of nacho cheese sauce. Sprinkle with cheddar cheese if using.
Fold the sides of the tortilla over the filling, then roll tightly from the bottom, tucking in the sides as you go.
Serve immediately, or for a crispy exterior, lightly toast the burrito in a dry skillet over medium heat for 2 minutes per side.
Tips
For extra flavor, add a spoonful of salsa or pico de gallo inside the burrito.
To make ahead, wrap each burrito in foil and reheat in a 350°F oven for 15 minutes.
If you prefer a spicier kick, use hot taco seasoning or add sliced jalapeños.
