Ingredients
8 corn tortillas (6-inch)
1 lb ground beef
1 tbsp vegetable oil, plus more for frying
1 small onion, diced
2 cloves garlic, minced
1 tsp chili powder
1/2 tsp ground cumin
1/2 tsp smoked paprika
Salt and pepper to taste
1 cup refried beans, warmed
1 cup shredded lettuce
1 large tomato, diced
1/2 cup crumbled queso fresco or cotija cheese
1/4 cup sour cream
Hot sauce to taste
Instructions
In a large skillet, heat 1 tbsp oil over medium-high heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook 30 seconds.
Add ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat.
Stir in chili powder, cumin, paprika, salt, and pepper. Cook 1 minute. Remove from heat and set aside.
In a separate skillet, heat about 1/2 inch vegetable oil over medium-high heat. Fry tortillas one at a time until golden and crispy, about 1-2 minutes per side. Drain on paper towels.
Spread each fried tortilla with a layer of refried beans. Top with seasoned beef, lettuce, tomato, cheese, sour cream, and hot sauce. Serve immediately.
