Ingredients
1 lb beef sirloin, thinly sliced
1/4 cup soy sauce
1/4 cup mirin
2 tablespoons sake
2 tablespoons sugar
1 teaspoon grated fresh ginger
2 cloves garlic, minced
1 tablespoon vegetable oil
1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Sesame seeds and sliced green onions for garnish
Instructions
In a small bowl, whisk together soy sauce, mirin, sake, sugar, ginger, and garlic until sugar dissolves. Set aside.
Heat vegetable oil in a large skillet or wok over high heat. Add beef slices in a single layer and cook until browned, about 1-2 minutes per side. Work in batches if needed to avoid overcrowding.
Return all beef to the skillet. Pour the teriyaki sauce over the beef and stir to coat. Bring to a simmer.
Add the cornstarch slurry and stir constantly until the sauce thickens, about 1 minute.
Remove from heat. Garnish with sesame seeds and green onions. Serve immediately over steamed rice.
Tips
For best results, slice beef against the grain into thin strips.
