Ingredients
1 lb beef sirloin steak
1 tbsp olive oil
Salt and pepper to taste
6 cups mixed salad greens
1 cup cherry tomatoes, halved
1 cucumber, sliced
1/2 red onion, thinly sliced
1/4 cup extra virgin olive oil
2 tbsp red wine vinegar
1 tsp Dijon mustard
1 clove garlic, minced
1 tsp honey
Instructions
Season the beef sirloin steak with salt, pepper, and 1 tbsp olive oil. Heat a grill or skillet over high heat and cook the steak for 4-5 minutes per side for medium-rare, or to your desired doneness. Let rest for 5 minutes, then slice thinly against the grain.
In a small bowl, whisk together extra virgin olive oil, red wine vinegar, Dijon mustard, minced garlic, and honey to make the vinaigrette. Season with salt and pepper to taste.
In a large bowl, combine mixed salad greens, cherry tomatoes, cucumber, and red onion. Add the sliced beef.
Drizzle the vinaigrette over the salad and toss gently to combine. Serve immediately.
Tips
For best flavor, let the steak rest before slicing.
Add crumbled feta or blue cheese for extra richness.
Store leftover vinaigrette in the fridge for up to a week.
