Ingredients
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 cup Arborio rice
1/2 cup dry red wine
4 cups beef broth, warmed
1/2 cup grated Parmesan cheese
2 tablespoons unsalted butter
Salt and black pepper to taste
2 tablespoons chopped fresh parsley (optional)
Instructions
Heat olive oil in a large saucepan over medium heat. Add onion and cook until softened, about 4 minutes. Add garlic and cook for 1 minute more.
Add Arborio rice and stir to coat with oil, cooking for 1-2 minutes until the edges of the grains become translucent.
Pour in the red wine and stir until fully absorbed.
Begin adding the warm beef broth one ladleful at a time, stirring frequently. Wait until each addition is mostly absorbed before adding the next. Continue for about 18-20 minutes, until the rice is creamy and al dente.
Remove from heat. Stir in Parmesan cheese and butter until melted and creamy. Season with salt and pepper to taste.
Serve immediately, garnished with parsley if desired.
Tips
For a deeper beef flavor, use homemade beef broth or add a splash of beef base.
Leftover risotto can be stored in the refrigerator for up to 2 days. Reheat with a splash of broth to restore creaminess.
