Ingredients
1 lb flank steak, thinly sliced against the grain
2 tablespoons vegetable oil
1 large onion, sliced
2 bell peppers (red and green), sliced
8 small flour tortillas
For the marinade:
3 tablespoons lime juice
2 tablespoons soy sauce
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
In a bowl, whisk together lime juice, soy sauce, minced garlic, cumin, chili powder, salt, and pepper. Add sliced beef and toss to coat. Let marinate for 10 minutes.
Heat 1 tablespoon oil in a large skillet over high heat. Add beef in a single layer (work in batches if needed) and cook without stirring for 2 minutes until seared. Stir and cook for another 1-2 minutes until browned but still tender. Transfer to a plate.
Reduce heat to medium-high and add remaining 1 tablespoon oil. Add onion and bell peppers; cook, stirring occasionally, for 4-5 minutes until softened and charred in spots.
Return beef to the skillet and toss with vegetables for 1 minute to combine and heat through.
Warm tortillas in a dry skillet or microwave. Serve beef and vegetable mixture in tortillas with desired toppings.
Tips
For best results, slice the steak very thinly across the grain.
Serve with sour cream, guacamole, salsa, and shredded cheese.
