Ingredients
8 oz dried chow mein noodles or spaghetti
1 lb flank steak, thinly sliced against the grain
2 tbsp soy sauce
1 tbsp cornstarch
1 tbsp vegetable oil
2 cups shredded cabbage
1 cup bean sprouts
1 red bell pepper, thinly sliced
3 green onions, sliced
3 cloves garlic, minced
1 tbsp ginger, minced
3 tbsp oyster sauce
1 tbsp dark soy sauce
1 tsp sesame oil
1/2 cup beef broth
Instructions
Cook noodles according to package directions until al dente. Drain and rinse under cold water. Set aside.
In a bowl, toss beef slices with 1 tbsp soy sauce and cornstarch. Let marinate 10 minutes.
In a small bowl, mix remaining 1 tbsp soy sauce, oyster sauce, dark soy sauce, sesame oil, and beef broth. Set aside.
Heat vegetable oil in a wok or large skillet over high heat. Add beef and stir-fry until browned, about 2 minutes. Remove beef and set aside.
Add cabbage, bean sprouts, and bell pepper to the wok. Stir-fry 2 minutes until slightly wilted. Add garlic and ginger; cook 30 seconds.
Return beef to the wok. Add the cooked noodles and pour the sauce over. Toss everything together until well combined and heated through, about 2 minutes.
Garnish with green onions and serve immediately.
Tips
For best results, use a wok over high heat to achieve the smoky 'wok hei' flavor.
Substitute chicken or pork for beef if desired.
Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
