Ingredients
1 lb ground beef
1 medium onion, chopped
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tsp paprika
1 can (10.75 oz) condensed cream of mushroom soup
1/2 cup milk
4 medium potatoes, peeled and thinly sliced (about 4 cups)
1 cup shredded cheddar cheese
2 tbsp chopped fresh parsley (optional)
Instructions
Preheat oven to 375°F (190°C). Grease a 9x13-inch baking dish.
In a large skillet over medium heat, cook ground beef, onion, and garlic until beef is browned and onion is tender. Drain excess fat. Stir in salt, pepper, and paprika.
In a small bowl, whisk together cream of mushroom soup and milk until smooth.
Layer half of the potato slices in the prepared baking dish. Top with half of the beef mixture, then half of the soup mixture. Repeat layers with remaining potatoes, beef, and soup.
Cover with foil and bake for 40 minutes.
Remove foil, sprinkle cheddar cheese on top, and bake uncovered for an additional 15 minutes, until potatoes are tender and cheese is bubbly and golden.
Let stand for 5 minutes before serving. Garnish with parsley if desired.
Tips
For extra flavor, add 1/2 cup of frozen peas or corn between layers.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
To make ahead, assemble casserole, cover, and refrigerate for up to 24 hours. Increase baking time by 10-15 minutes.
