Ingredients
2 lbs beef chuck, cut into 1-inch cubes
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
8 oz cremini mushrooms, sliced
2 tbsp all-purpose flour
4 cups beef broth
1 cup red wine (optional, or more broth)
2 tbsp tomato paste
2 bay leaves
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
3 large carrots, peeled and cut into chunks
2 celery stalks, sliced
1 lb potatoes, peeled and cubed
Instructions
Season beef cubes with salt and pepper. Heat oil in a large pot over medium-high heat. Brown beef in batches, about 4 minutes per batch. Set aside.
Reduce heat to medium. Add onion and garlic, cook until softened, about 3 minutes. Add mushrooms and cook until they release liquid and start to brown, about 5 minutes.
Sprinkle flour over vegetables and stir for 1 minute. Pour in beef broth and red wine, scraping up browned bits. Stir in tomato paste, bay leaves, thyme, salt, and pepper.
Return beef to pot. Bring to a boil, then reduce heat to low. Cover and simmer for 1 hour.
Add carrots, celery, and potatoes. Continue simmering, covered, until vegetables and beef are tender, about 30 minutes more.
Remove bay leaves. Adjust seasoning to taste. Serve hot.
Tips
For a thicker stew, mash some of the potatoes against the pot before serving.
