Ingredients
2 large eggs
1/2 lb ground beef
1/4 cup milk
1/4 tsp salt
1/8 tsp black pepper
1 tbsp butter
1/4 cup shredded cheddar cheese (optional)
Instructions
In a bowl, whisk eggs, milk, salt, and pepper until frothy.
In a non-stick skillet over medium-high heat, cook ground beef, breaking it apart, until browned and cooked through, about 5 minutes. Drain excess fat.
Reduce heat to medium-low. Push beef to one side of the skillet. Add butter to the empty side and let melt.
Pour egg mixture into the buttered side. Let eggs set slightly, then stir gently, incorporating beef as they cook, until eggs are just set but still moist, about 2-3 minutes.
Remove from heat. Sprinkle with cheese if desired and serve immediately.
