Ingredients
1 lb flank steak, thinly sliced against the grain
3 cups broccoli florets
2 tablespoons vegetable oil
2 cloves garlic, minced
1/4 cup soy sauce
1/4 cup rice vinegar
1/4 cup brown sugar
2 tablespoons ketchup
1 tablespoon cornstarch
1/4 cup water
1 teaspoon sesame oil
1/4 teaspoon red pepper flakes (optional)
Instructions
In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, ketchup, cornstarch, water, sesame oil, and red pepper flakes. Set aside.
Heat 1 tablespoon vegetable oil in a wok or large skillet over high heat. Add beef in a single layer and sear for 2-3 minutes until browned. Remove beef and set aside.
Add remaining 1 tablespoon oil to the wok. Add broccoli and stir-fry for 2-3 minutes until bright green and tender-crisp. Add garlic and cook for 30 seconds.
Return beef to the wok. Pour the sauce over the beef and broccoli. Stir-fry for 1-2 minutes until the sauce thickens and coats everything evenly.
Serve immediately over steamed rice.
Tips
Slice the beef against the grain for tenderness.
To save time, use pre-cut broccoli florets.
Adjust sweetness or tanginess by varying brown sugar or vinegar.
