Ingredients
1 lb flank steak, thinly sliced against the grain
3 cups broccoli florets
3 tbsp soy sauce
2 tbsp oyster sauce
1 tbsp brown sugar
1 tbsp cornstarch
1/2 cup beef broth
2 cloves garlic, minced
1 tsp grated fresh ginger
2 tbsp vegetable oil, divided
1/4 tsp sesame oil (optional)
Instructions
In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, cornstarch, and beef broth. Set aside.
Heat 1 tbsp vegetable oil in a wok or large skillet over high heat. Add broccoli and stir-fry for 1-2 minutes until bright green. Remove from wok.
Add remaining 1 tbsp oil to wok. Add beef in a single layer; let sear for 1 minute without stirring, then stir-fry for 1-2 minutes until browned. Remove beef.
Reduce heat to medium. Add garlic and ginger; cook for 30 seconds until fragrant.
Return beef and broccoli to wok. Pour in sauce mixture; stir-fry for 1-2 minutes until sauce thickens and coats everything. Drizzle with sesame oil if using. Serve immediately.
Tips
For tender beef, freeze the steak for 15 minutes before slicing thinly.
