Ingredients
1 tablespoon vegetable oil
1 small onion, diced
2 cloves garlic, minced
1 (15-ounce) can refried beans
1/4 cup water
1 teaspoon chili powder
1/2 teaspoon ground cumin
Salt to taste
4 large flour tortillas (for burritos) or 8 hard taco shells (for tacos)
Heat oil in a skillet over medium heat. Add onion and cook until soft, about 3 minutes. Add garlic and cook 1 minute more.
Stir in refried beans, water, chili powder, cumin, and salt. Cook, stirring, until heated through, about 3 minutes. Remove from heat.
Warm tortillas in a dry skillet or microwave, or prepare taco shells according to package directions.
For burritos: Spoon about 1/3 cup bean mixture down the center of each tortilla. Top with 1/4 cup cheese and desired toppings. Fold in sides, then roll up tightly. For tacos: Fill each shell with bean mixture, cheese, and toppings.
Serve immediately.
Tips
For extra flavor, add a splash of hot sauce or a pinch of cayenne to the beans.
To make ahead, prepare bean mixture and refrigerate up to 3 days; reheat before assembling.
For a vegan version, use vegan refried beans, omit cheese, and add vegan sour cream.
