Ingredients
1 tbsp vegetable oil
1/2 cup diced onion
2 cloves garlic, minced
1 can (15 oz) refried beans
1/2 tsp ground cumin
1/2 tsp chili powder
Salt to taste
1 cup cooked rice (white or brown)
4 large flour tortillas (10-inch)
1 cup shredded cheddar or Mexican blend cheese
1/2 cup sour cream
1/2 cup salsa
1/2 cup diced tomatoes
1/4 cup sliced black olives (optional)
2 tbsp chopped fresh cilantro
Instructions
Heat oil in a skillet over medium heat. Add onion and cook until soft, about 3 minutes. Add garlic and cook 1 minute more.
Stir in refried beans, cumin, chili powder, and salt. Cook, stirring, until heated through, about 3 minutes. Remove from heat.
Warm tortillas in a dry skillet or microwave until pliable.
Lay a tortilla flat. Spread about 1/4 cup of the bean mixture down the center. Top with 1/4 cup rice, 1/4 cup cheese, 1 tablespoon sour cream, 1 tablespoon salsa, 1 tablespoon diced tomatoes, olives (if using), and cilantro.
Fold the sides of the tortilla over the filling, then roll up tightly from the bottom. Repeat with remaining tortillas and filling.
Optional: Place burritos seam-side down on a baking sheet and bake at 350°F for 10 minutes to melt cheese and crisp tortillas. Serve immediately with extra salsa and sour cream.
Tips
For a spicier burrito, add chopped jalapeños or use hot salsa.
Leftover burritos can be wrapped in foil and reheated in a 350°F oven for 15 minutes.
Substitute refried beans with whole black beans for a different texture.
