Ingredients
1 tablespoon vegetable oil
1 can (15 oz) refried beans
1/4 cup water
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Salt to taste
4 small flour tortillas (6-inch)
1 cup shredded cheddar or Monterey Jack cheese
1/2 cup salsa
1/2 cup sour cream
1/2 cup shredded lettuce
1/4 cup diced tomatoes
2 tablespoons chopped fresh cilantro
Instructions
In a small saucepan, heat oil over medium heat. Add refried beans, water, cumin, chili powder, and salt. Stir and cook until heated through, about 3 minutes.
Warm tortillas in a dry skillet or microwave until pliable.
Spoon about 1/4 cup of bean mixture onto the center of each tortilla. Top with 1/4 cup cheese.
Fold tortillas in half and place in the skillet. Cook over medium heat until golden brown on one side, about 2 minutes. Flip and cook until cheese is melted and second side is golden, about 2 more minutes.
Serve tacos with salsa, sour cream, lettuce, tomatoes, and cilantro.
Tips
Use corn tortillas for a gluten-free option.
Add sliced jalapeños or hot sauce for extra heat.
