These bean and cheese burritos are a quick, satisfying meal made with refried beans, melted cheese, and your favorite fillings wrapped in a warm tortilla.

Ingredients
4 large flour tortillas (10-inch)
1 can (15 oz) refried beans
1 cup shredded cheddar or Monterey Jack cheese
1/2 cup sour cream
1/2 cup salsa
1/4 cup chopped fresh cilantro (optional)
1/2 teaspoon ground cumin
Salt to taste
Instructions
Warm the refried beans in a small saucepan over medium heat, stirring occasionally. Add cumin and salt to taste.
Warm the tortillas one at a time in a dry skillet over medium heat for about 30 seconds per side, or wrap in a damp paper towel and microwave for 20 seconds.
Spread about 1/4 cup of refried beans down the center of each tortilla.
Sprinkle 1/4 cup of cheese over the beans.
Add a dollop of sour cream and salsa, and top with cilantro if using.
Fold the sides of the tortilla over the filling, then roll tightly from the bottom to form a burrito.
Place the burritos seam-side down in a skillet over medium heat and cook for 2-3 minutes per side, until golden and the cheese is melted.
Serve immediately with extra salsa and sour cream.
Tips
For extra flavor, add cooked rice, seasoned ground beef, or sautéed peppers and onions.
To make ahead, wrap burritos in foil and reheat in a 350°F oven for 15 minutes.
Store leftover burritos in the refrigerator for up to 3 days.
