Ingredients
4 large flour tortillas (10-inch)
1 can (16 oz) refried beans
1 cup shredded cheddar or Monterey Jack cheese
1/2 cup salsa
1/4 cup chopped fresh cilantro
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
Salt to taste
Optional: sour cream, guacamole, hot sauce for serving
Instructions
In a small saucepan, heat the refried beans over medium heat. Stir in cumin, chili powder, and salt. Keep warm.
Warm the tortillas one by one in a dry skillet over medium heat for about 30 seconds per side, or wrap in a damp paper towel and microwave for 20 seconds.
Spread about 1/4 cup of the seasoned beans down the center of each tortilla.
Top with 1/4 cup cheese, 2 tablespoons salsa, and a sprinkle of cilantro.
Fold the sides of the tortilla over the filling, then roll up tightly from the bottom to form a burrito.
Place the burritos seam-side down in a skillet over medium heat. Cook for 2-3 minutes per side, until golden and the cheese is melted.
Serve immediately with optional toppings.
Tips
For extra flavor, add cooked rice or sautéed onions and peppers.
To make ahead, assemble burritos without cooking, wrap in foil, and refrigerate. Reheat in a 350°F oven for 15 minutes.
