Ingredients
1 lb ground beef
1 tbsp vegetable oil
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning (or 2 tbsp homemade)
1/2 cup water
1 can (15 oz) refried beans
1 bag (10 oz) tortilla chips
2 cups shredded Mexican blend cheese
1/2 cup sliced black olives
1/2 cup diced tomatoes
1/4 cup chopped fresh cilantro
1/2 cup sour cream
1/2 cup salsa
Instructions
Preheat oven to 400°F (200°C).
In a large skillet, heat oil over medium-high heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook for 30 seconds.
Add ground beef and cook, breaking it up, until browned. Drain excess fat.
Stir in taco seasoning and water. Simmer until thickened, about 5 minutes.
In a small saucepan, warm refried beans over low heat.
Spread tortilla chips on a large oven-safe platter or baking sheet. Spoon refried beans over chips, then top with beef mixture.
Sprinkle cheese evenly over the top, then add black olives.
Bake for 8-10 minutes until cheese is melted and bubbly.
Remove from oven and top with diced tomatoes, cilantro, sour cream, and salsa. Serve immediately.
Tips
For extra heat, add sliced jalapeños before baking.
Serve with guacamole or extra salsa on the side.
