Ingredients
1 lb pizza dough, store-bought or homemade
1 cup cooked shredded chicken
1/2 cup BBQ sauce, plus more for drizzling
1 cup shredded mozzarella cheese
1/2 cup shredded Gouda or smoked mozzarella
1/4 cup thinly sliced red onion
2 tbsp chopped fresh cilantro
1 tbsp olive oil
Cornmeal or flour for dusting
Instructions
Preheat oven to 500°F (260°C) or as high as it will go. If using a pizza stone, place it in the oven to preheat.
In a small bowl, toss shredded chicken with 1/4 cup BBQ sauce until well coated.
On a lightly floured surface, divide dough in half. Stretch or roll each half into a 12-inch round. Transfer to parchment paper or a cornmeal-dusted pizza peel.
Brush each dough round lightly with olive oil. Spread remaining BBQ sauce evenly over the dough, leaving a 1-inch border.
Sprinkle mozzarella and Gouda over the sauce. Top with BBQ chicken and red onion slices.
Slide pizza onto preheated stone or baking sheet. Bake for 10-15 minutes until crust is golden and cheese is bubbly.
Remove from oven, drizzle with extra BBQ sauce, and sprinkle with fresh cilantro. Let cool for 2 minutes, then slice and serve.
Tips
For extra smoky flavor, use grilled or rotisserie chicken.
If you don't have a pizza stone, bake on a preheated inverted baking sheet.
Leftover pizza can be stored in the fridge for up to 3 days; reheat in a hot oven or skillet.
