Ingredients
1 lb pizza dough, room temperature
6 oz low-moisture mozzarella cheese, cut into 12 sticks (1/2-inch thick each)
1 cup cooked shredded chicken
1/2 cup BBQ sauce, plus more for drizzling
1 cup shredded mozzarella cheese
1/4 cup thinly sliced red onion
2 tbsp chopped fresh cilantro
1 tbsp olive oil
1 tbsp cornmeal for dusting
Instructions
Preheat oven to 475°F (245°C) with a pizza stone or inverted baking sheet inside for at least 30 minutes.
On a lightly floured surface, roll dough into a 14-inch circle. Place the cheese sticks around the edge, about 1 inch from the edge. Fold the dough over the cheese and press to seal, forming a stuffed crust.
Transfer dough to a cornmeal-dusted pizza peel or parchment paper. In a small bowl, toss chicken with 1/4 cup BBQ sauce. Spread remaining 1/4 cup BBQ sauce over dough, leaving a 1/2-inch border. Top with shredded mozzarella, then BBQ chicken, red onion, and cilantro.
Slide pizza onto preheated stone or baking sheet. Bake until crust is golden and cheese is bubbly, 12-15 minutes. Drizzle with extra BBQ sauce, slice, and serve.
Tips
For extra flavor, use smoked Gouda or cheddar in the stuffed crust.
