1 lb boneless skinless chicken breasts, chopped into small pieces
2 tbsp olive oil
1/2 cup BBQ sauce
1 tbsp apple cider vinegar
1/2 tsp smoked paprika
1/4 tsp garlic powder
1/4 tsp salt
1/8 tsp black pepper
8 large butter lettuce leaves (or iceberg)
1/2 cup shredded carrots
1/2 cup diced cucumber
1/4 cup chopped fresh cilantro
2 tbsp ranch dressing (optional)
Instructions
Heat olive oil in a large skillet over medium-high heat. Add chicken pieces and cook, stirring occasionally, until browned and cooked through, about 6-8 minutes.
In a small bowl, whisk together BBQ sauce, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper. Pour over cooked chicken; stir to coat and cook for 1-2 minutes until sauce thickens slightly.
To assemble, place a lettuce leaf on a plate. Spoon about 1/4 cup of BBQ chicken into the center. Top with shredded carrots, diced cucumber, and cilantro. Drizzle with ranch dressing if desired.
