Ingredients
4 large ripe tomatoes, roughly chopped
1 English cucumber, peeled and chopped
1 red bell pepper, seeded and chopped
1 small red onion, chopped
2 cloves garlic, minced
3 tablespoons extra-virgin olive oil
2 tablespoons sherry vinegar or red wine vinegar
1 teaspoon salt
1/2 teaspoon black pepper
1 cup cold water (optional, for thinning)
Instructions
In a blender, combine tomatoes, cucumber, bell pepper, onion, garlic, olive oil, vinegar, salt, and pepper.
Blend on high until completely smooth, about 1-2 minutes. If too thick, add cold water 1/4 cup at a time to reach desired consistency.
Taste and adjust seasoning with more salt, pepper, or vinegar as needed.
