Ingredients
1.5 lbs boneless skinless chicken thighs
1.5 lbs pork baby back ribs (2 racks)
1 lb beef sirloin steak (1 inch thick)
1 cup barbecue sauce (store-bought or homemade)
2 tbsp olive oil
1 tbsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
6 hamburger buns, split
1 cup coleslaw mix
1/4 cup mayonnaise
1 tbsp apple cider vinegar
1 tbsp sugar
Pickle slices and jalapeños for serving
Instructions
Prepare a grill for medium-high heat (about 375-400°F).
In a small bowl, mix smoked paprika, garlic powder, onion powder, salt, and pepper. Rub olive oil over chicken, ribs, and steak, then season all over with the spice mix.
Grill ribs first: place on grill, cover, and cook for 15 minutes, turning once. Meanwhile, grill chicken and steak: cook chicken 6-8 minutes per side until internal temp 165°F; cook steak 4-5 minutes per side for medium-rare (135°F).
During last 5 minutes of grilling, brush all meats with barbecue sauce. Grill buns cut-side down until lightly toasted, about 1 minute.
While meats rest, make coleslaw: combine coleslaw mix, mayonnaise, vinegar, and sugar in a bowl; toss to coat.
Slice steak against the grain, cut ribs into individual pieces, and slice chicken. Arrange on a large platter with coleslaw, pickles, jalapeños, and extra barbecue sauce on the side.
Tips
Let meats rest 5 minutes before slicing to retain juices.
Store leftover meats in an airtight container in the fridge for up to 3 days.
Reheat gently in a covered skillet with a splash of water or sauce.
