A classic British comfort food featuring juicy pork sausages over creamy mashed potatoes, topped with a rich mushroom gravy.

Ingredients
8 good-quality pork sausages (bangers)
2 lbs (900g) potatoes, peeled and quartered
4 tbsp unsalted butter
1/2 cup whole milk
Salt and freshly ground black pepper to taste
2 tbsp olive oil
1 large onion, thinly sliced
8 oz (225g) cremini mushrooms, sliced
2 cloves garlic, minced
2 tbsp all-purpose flour
2 cups beef broth
1 tsp fresh thyme leaves (or 1/2 tsp dried)
1 tbsp Worcestershire sauce
Instructions
Place potatoes in a large pot, cover with cold salted water, and bring to a boil. Reduce heat and simmer until tender, about 15-20 minutes. Drain well.
Return potatoes to the pot and mash with butter and milk until smooth. Season with salt and pepper. Cover and keep warm.
While potatoes cook, heat olive oil in a large skillet over medium heat. Add sausages and cook, turning occasionally, until browned on all sides and cooked through, about 10-12 minutes. Remove sausages and set aside.
In the same skillet, add onion and cook until softened, about 5 minutes. Add mushrooms and garlic, cook until mushrooms are golden and liquid has evaporated, about 5-7 minutes.
Sprinkle flour over the mushroom mixture and stir for 1 minute. Gradually pour in beef broth while stirring constantly. Add thyme and Worcestershire sauce. Bring to a simmer and cook until gravy thickens, about 3-4 minutes. Season with salt and pepper.
Return sausages to the skillet and heat through for 2 minutes. Serve sausages and gravy over mashed potatoes.
Tips
For extra creamy mash, use Yukon Gold potatoes and warm the milk before adding.
To keep sausages warm while making gravy, place them on a baking sheet in a 200°F (95°C) oven.
Gravy can be made ahead and reheated; thin with a little broth if needed.
