Ingredients

- 1 cup all-purpose flour
- 1 tablespoon granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 3/4 cup milk
- 1 large egg
- 2 tablespoons unsalted butter, melted
- 1/2 cup crushed cornflakes or similar cereal
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In a separate bowl, combine mashed banana, milk, egg, and melted butter. Mix well.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in crushed cereal.
- Heat a griddle or non-stick pan over medium heat and lightly grease with butter or oil.
- Pour 1/4 cup batter per pancake onto the hot surface. Cook until bubbles form on the surface and edges look set, about 2-3 minutes.
- Flip and cook until golden brown, about 1-2 minutes more. Serve warm with maple syrup or fresh fruit.
Tips
- Use overripe bananas for maximum sweetness and flavor.
- For extra crunch, top pancakes with additional crushed cereal before serving.
- Leftover pancakes can be frozen and reheated in a toaster.
