Ingredients
8 bone-in, skin-on chicken thighs (about 2 lbs)
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1/2 cup balsamic vinegar
2 tbsp honey
2 cloves garlic, minced
1 tsp dried rosemary
Instructions
Preheat oven to 400°F (200°C). Pat chicken thighs dry and season with salt and pepper.
Heat olive oil in a large oven-safe skillet over medium-high heat. Place chicken skin-side down and sear until golden brown, about 5 minutes. Flip and cook 2 more minutes. Transfer chicken to a plate.
Drain excess fat from skillet, leaving about 1 tbsp. Add balsamic vinegar, honey, garlic, and rosemary. Bring to a simmer, scraping up browned bits. Cook until slightly thickened, about 2 minutes.
Return chicken to skillet, skin-side up. Spoon some glaze over the top.
Transfer skillet to oven and bake until chicken is cooked through (internal temp 165°F), about 15-20 minutes.
Remove from oven and let rest 5 minutes. Serve with extra glaze from the pan.
Tips
For extra crispiness, broil for 1-2 minutes after baking.
