Ingredients
1 (2-3 lb) boneless, skin-on turkey breast
1.5 lbs Yukon Gold potatoes, cut into 1-inch chunks
3 tbsp olive oil
4 cloves garlic, minced
1 tsp dried rosemary
1 tsp dried thyme
1 tsp salt
1/2 tsp black pepper
1/2 cup chicken broth
Instructions
Preheat oven to 400°F.
In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, and pepper.
Place turkey breast in a roasting pan. Rub the oil mixture all over the turkey, including under the skin.
Arrange potato chunks around the turkey in the pan.
Pour chicken broth into the pan, avoiding the turkey skin.
Roast for 50-60 minutes, or until turkey reaches 165°F internal temperature and potatoes are tender and golden. Baste turkey with pan juices halfway through.
Let turkey rest 10 minutes before slicing. Serve with potatoes and pan juices.
Tips
For extra crispy potatoes, toss them in a separate bowl with a little olive oil and salt before adding to the pan.
Leftover turkey can be stored in the refrigerator for up to 3 days.
To reheat, place slices in a 350°F oven with a splash of broth to keep moist.
