Ingredients
4 medium sweet potatoes (about 8 oz each)
2 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
Optional toppings: butter, cinnamon, brown sugar, or sour cream
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
Scrub sweet potatoes clean and pat dry. Pierce each potato several times with a fork to allow steam to escape.
Rub each sweet potato with olive oil, then sprinkle evenly with salt and pepper.
Place potatoes on the prepared baking sheet, spacing them apart.
Bake for 45-55 minutes, until tender when pierced with a fork or knife. For extra crispy skin, bake directly on the oven rack (place a sheet on the rack below to catch drips).
Let rest for 5 minutes before serving. Slice open and fluff with a fork. Add desired toppings.
