Ingredients
4 medium sweet potatoes (about 8 oz each)
2 tablespoons unsalted butter, melted
2 tablespoons brown sugar
1/4 teaspoon salt
1/8 teaspoon black pepper (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
Scrub sweet potatoes and pat dry. Pierce each potato several times with a fork. Place on the baking sheet and bake for 40-50 minutes, until tender when pierced with a knife.
Remove from oven and let cool slightly. Cut each potato in half lengthwise and place cut-side up on the baking sheet.
Brush the cut surfaces with melted butter. Sprinkle evenly with brown sugar, salt, and pepper if using.
Return to oven and bake for 5-10 minutes more, until sugar is melted and bubbly. Serve warm.
Tips
Adjust brown sugar to taste; you can use maple syrup or honey as a substitute.
