Ingredients
- 4 large russet potatoes (about 8 oz each)
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- Optional toppings: butter, sour cream, shredded cheese, chives, bacon bits
Instructions
- Preheat oven to 425°F (220°C). Scrub potatoes clean and pat dry.
- Pierce each potato several times with a fork to allow steam to escape.
- Rub potatoes with olive oil, then sprinkle evenly with salt and pepper.
- Place potatoes directly on oven rack or on a baking sheet. Bake for 50-60 minutes, until skin is crisp and a knife inserts easily.
- Remove from oven, let rest 5 minutes. Slice open, fluff insides with a fork, and serve with desired toppings.

- For extra crispy skin, brush with oil and salt again halfway through baking.
