Ingredients
8 chicken drumsticks (about 2 lbs)
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon cayenne pepper (optional)
1 cup all-purpose flour (for frying) or 2 tablespoons cornstarch (for baking)
Instructions
Pat drumsticks dry with paper towels. In a small bowl, mix salt, pepper, garlic powder, onion powder, paprika, and cayenne if using.
Rub drumsticks with olive oil, then sprinkle spice mixture evenly over all sides. Let sit 10 minutes.
For baking: Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Arrange drumsticks on rack. Bake 30-35 minutes, turning halfway, until internal temp reaches 165°F and skin is crispy.
For frying: Place flour in a shallow dish. Dredge each drumstick in flour, shaking off excess. Heat 1 inch oil in a deep skillet to 350°F. Fry drumsticks in batches (do not crowd) 10-12 minutes, turning occasionally, until golden and cooked through. Drain on paper towels.
Tips
For extra crunch in baked version, spray drumsticks with cooking spray before baking.
Serve with dipping sauces like ranch, barbecue, or honey mustard.
Leftovers can be stored in fridge up to 3 days; reheat in oven or air fryer to restore crispiness.
