Ingredients
1 lb elbow macaroni
4 tbsp unsalted butter
1/4 cup all-purpose flour
3 cups whole milk
2 cups shredded sharp cheddar cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 tsp salt
1/2 tsp black pepper
1/2 tsp paprika
1/4 tsp ground nutmeg
2 large eggs, lightly beaten
1/2 cup breadcrumbs (optional, for topping)
Instructions
Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish.
Cook macaroni in salted boiling water until al dente, about 7 minutes. Drain and set aside.
In a large saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute until bubbly.
Gradually whisk in milk and cook, stirring constantly, until thickened, about 5 minutes.
Remove from heat. Stir in cheddar, mozzarella, Parmesan, salt, pepper, paprika, and nutmeg until melted and smooth.
Let cheese sauce cool slightly, then whisk in beaten eggs until well combined.
Combine cooked macaroni with cheese sauce in a large bowl. Pour into prepared baking dish.
Sprinkle breadcrumbs evenly over top if desired.
Bake for 35-40 minutes until golden and bubbly. Let rest for 10 minutes before serving.
