Ingredients
4 bone-in, skin-on chicken thighs (about 1.5 lbs)
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 tablespoon lemon zest
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lemon, sliced into rounds
Instructions
Preheat oven to 400°F (200°C).
In a small bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, salt, and pepper.
Place chicken thighs in a baking dish or oven-safe skillet. Pour the marinade over the chicken and turn to coat. Arrange lemon slices around and on top of the chicken.
Bake for 35-40 minutes, until the chicken is golden brown and reaches an internal temperature of 165°F (74°C).
Let rest 5 minutes before serving. Spoon pan juices over the chicken.
Tips
For extra crispy skin, broil for the last 2-3 minutes.
Serve with roasted vegetables or rice to soak up the juices.
