Ingredients
1 1/2 cups all-purpose flour
1 1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs, room temperature
2 tsp vanilla extract
1/2 cup whole milk, room temperature
Instructions
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
In a medium bowl, whisk together flour, baking powder, and salt.
In a large bowl, beat butter and sugar with an electric mixer until light and fluffy, about 3 minutes.
Add eggs one at a time, beating well after each addition. Mix in vanilla.
Add flour mixture in three additions, alternating with milk, starting and ending with flour. Mix just until combined.
Divide batter evenly among prepared cups, filling each about 2/3 full.
Bake for 18-22 minutes, until a toothpick inserted into center comes out clean. Cool in pan for 5 minutes, then transfer to wire rack to cool completely.
